Autumn Squash

Preparation time: 25 minutes
Serves 2

  • 2 tsp olive oil
  • 1 cup fresh or frozen chopped onion
  • 2 cups cubed acorn squash (1/2 inch cubes)
  • 1 tbsp broken walnuts
  • Salt and freshly ground pepper to taste
  1. Heat oil in a medium saucepan over medium-high heat.
  2. Sauté onions and squash for 8 minutes, stirring several times.
  3. Add walnuts and sauté 2 more minutes. Add salt and pepper.
  4. Cover and remove from heat. Let sit, covered, for at least 10 minutes or until ready to serve.
